Since we are going into “the end of winter” and I am tired of cooking, this is my all time favorite crockpot soup recipe! It has a really nice sweet taste because of the combination of vegetables being used.
Quick & Healthy Vegetable Soup
4 cups vegetable or chicken broth
1 cup of frozen corn
1/2 cup of chopped carrots
1/2 cup green beans
1 cup of cubed zucchini
12-oz can chopped tomatoes
1/2 cup chopped onions
2 cloves garlic, minced
1/2 tsp dried thyme
1/2 tsp dried basil
1/4 tsp lemon pepper
1 cup chopped broccoli
1/2 cup frozen peas
1. Combine all ingredients except broccoli and peas in slow cooker
2. Cover. Cook on Low 7 hours or Hi 31/2 hours
3. Stir in broccoli. Cook an additional 45 minutes on High
4. Stir in peas. Cook an additional 15 minutes on High
